If you don't cook it it doesn't get the right texture and tolerance to frying and grilling without melting. Cooking makes it more rubbery, similarly to mozzarella, but more robust.

it does not belong to only greek cypriots because it is also the tradition of turkish cyprus so it is the cheese of CYPRUS

firstly it is a patented Greek Cyprus cheese. Secondly...the video shows only the half way to do it..you have to cook it in it's whey for over one hour
